Italien Biscotti

If you’ve never had biscotti, they are an Italian biscuit that is crunchier, drier, and less sweet than your traditional biscuit. With a pleasant almond flavor, they are light, airy, and the perfect dip for tea or coffee.

Ingredients:
1) 1 3/4 cup flour
2) 1 tsp baking powder
3) 1/2 tsp salt
4) 2 eggs
5) 1/4 cup melted butter
6) 1/2 cup granulated sugar
7) 2 tsp vanilla extract
8) 1/2 cup slivered almonds
9) 1/4 cup cranberries
Directions:
1) Pre-heat your oven to 180ºC or 350ºF
2) In a medium-sized bowl combine your flour, baking powder, and salt then set that aside
3) In a large bowl whisk together your melted butter and sugar until a grainy consistency is formed
4) Crack in your eggs and add your vanilla then whisk until everything is evenly combined
5) In 2 increments add in your dry ingredients and fold them in using a rubber spatula
6) Add in your cranberries and slivered almonds folding them is as-well
7) Line a baking sheet with baking paper
8) Place your dough onto the baking sheet and using your hands flatten the dough into an oval shape, until it is 1/2 a centimeter thick
9) Bake the dough at 180ºC for 30 minutes
10) After 30 minutes take the Biscotti out and slice it horizontally into 1/2 cm - 1 cm thick pieces
11) Lay them out face flat onto the baking sheet and bake them at 120ªC for 15 minutes to make them crispy
12) After the 15 minutes take them out and let them cool for 15 - 25 minutes

Reminders:
1) Do not use wax paper instead of baking paper. Wax paper is not heat resistant and therefore is mildly toxic and a safety concern when baked.
2) During step 5 make sure to use a rubber spatula and not a whisk to prevent over-mixing the dough.
3) The thinner you slice your biscotti the less time it takes to get them crispy. Therefore if you slice them to 1/2 cm thick keep a close eye on them to ensure they do not burn.
